Technical Description Disclosed herein are antifreeze protein analogue having salt bridges within the amino acid repeating units thereof and consisting essentially of an amino acid sequence represented by formula(I) or (III): Y-P-[A-R]a-W-Z (I) Y-P-A-[R-A]n-W-Z (III), coding nucleic acid sequences, and the production of recombinant antifreeze protein. This technique can be value-added in the cryo-preservation of marine, livestock, food, cosmetic, and Pharmaceutical industry.
Scientific Breakthrough This technique can value-added cry-preservation of marine, livestock, food, cosmetic, and pharmaceutical industry. It can minimize the ice crystal and avoid the harmful damage caused by the increasing of ice crystal size during the cold chain inspite of the frozen equipment. This technique is also superior in thermal-processing and broad pH range products
Industrial Applicability This technique can applied and value-added cry-preservation of marine, livestock, food, cosmetic, and Pharmaceutical industry to maintain the quality during cold chain period. This technique also provide the advantage to apply in thermal-processing and broad pH range products. Therefore, this technique can apply not only in frozen product but also the frozen products which need thermol processing before frozen.
